Crispy Kohlrabi Fries

Ingredients:

  • 2 medium kohlrabi, peeled and cut into fry shapes

  • 1 tbsp olive oil (or avocado oil)

  • 1/2 tsp sea salt

  • 1/4 tsp garlic powder

  • 1/4 tsp smoked paprika (optional, for depth)

  • 1/4 tsp black pepper

  • 1 tbsp nutritional yeast (optional, for cheesy flavor)

  • 1 tbsp cornstarch or arrowroot powder (for extra crispiness)

Instructions:

Oven Method

  1. Preheat oven to 200°C (400°F).

  2. Prep the fries: In a bowl, toss kohlrabi sticks with oil, spices, nutritional yeast, and cornstarch until evenly coated.

  3. Spread on a baking tray lined with parchment paper in a single layer (don’t overcrowd).

  4. Bake for 25–30 minutes, flipping halfway through, until golden and crispy on the edges.

Air-Fryer Method

  1. Preheat air fryer to 200°C (400°F).

  2. Toss and coat the fries as above.

  3. Cook for 15–18 minutes, shaking halfway through. Check for doneness—some air fryers cook faster.

Serve With:

  • Vegan garlic aioli

  • Lemon-tahini dip

  • Ketchup with a pinch of cumin
