Cabbage & Apple Slaw (Fresh & Zingy)
Ingredients:
- 300 g white cabbage, finely shredded
- 1 large apple (150 g), julienned
- 1 small carrot (80 g), grated
- 2 spring onions, sliced
- 2 tbsp apple cider vinegar (30 ml)
- 1 tbsp olive oil (15 ml)
- 1 tsp maple syrup (5 ml)
- Salt & pepper
- Optional: toasted pumpkin seeds
Method:
- In a large bowl, mix cabbage, apple, carrot, and spring onion.
- In a small jar, shake together vinegar, olive oil, maple, salt & pepper.
- Pour dressing over the slaw. Toss well.
- Let it sit for 10-15 mins to soften.
- Sprinkle with pumpkin seeds before serving.
